Ingredients
Makes 2 generous serves
For the Vanilla Collagen Chia Pudding
-
1 cup milk of choice β dairy, almond or coconut milk all work well
-
Β½ cup thick Greek yoghurt
-
ΒΌ cup chia seeds
-
2 scoops Perfect Hydrolyzed Collagen
-
1 teaspoon vanilla extract
-
1β2 teaspoons honey or maple syrup, to taste
For the Raspberry Swirl
-
1 cup fresh or frozen raspberries
-
1 teaspoon honey or maple syrup, optional
For the Peach Layer
-
1 large ripe peach, finely diced
-
Extra peach slices for serving
Optional toppings
-
Fresh raspberries
-
Toasted coconut flakes
-
Chopped pistachios
-
A little extra Greek yoghurt
Method
1. Make the vanilla collagen chia pudding
Add the milk, Greek yoghurt, Perfect Hydrolyzed Collagen, vanilla and honey or maple syrup to a bowl or jar and whisk until smooth.
Add the chia seeds and stir thoroughly.
Leave for about 5β10 minutes, then stir again. This second stir helps stop the chia seeds from settling or clumping together.
Cover and refrigerate for at least 4 hours, or preferably overnight, until thick and creamy.
2. Make the raspberry swirl β€οΈ
Place the raspberries in a small bowl and gently mash with a fork.
For a slightly sweeter raspberry layer, stir through a teaspoon of honey or maple syrup.
There's no cooking required β we want to keep that gorgeous fresh raspberry flavour.
3. Prepare the peach π
Dice your ripe peach into small pieces, reserving a few beautiful slices for the top.
4. Layer it up
Grab two glasses or jars and start layering!
Spoon in some vanilla collagen chia pudding, followed by diced peach and a spoonful of crushed raspberries.
Repeat the layers until your glasses are full.
Don't worry about making them too perfect β allowing some of that bright raspberry to swirl through the creamy chia pudding makes them look even better.
5. Make it pretty β¨
Finish with fresh peach slices, raspberries and your choice of coconut or chopped pistachios.
Serve chilled and enjoy!
Why we love this recipe π
This little jar packs quite a lot into something so simple.
π Peaches bring natural sweetness and beautiful summer flavour.
β€οΈ Raspberries provide fibre and naturally contain vitamin C.
π± Chia seeds provide fibre, plant-based omega-3 ALA and a range of minerals.
π₯£ Greek yoghurt adds creaminess along with protein and calcium.
π Perfect Hydrolyzed Collagen provides an easy collagen protein boost without overpowering those fresh fruit and vanilla flavours.
And because vitamin C contributes to normal collagen formation, using vitamin-C-containing fruit alongside a collagen recipe gives us another reason to love all those gorgeous raspberries.
Make it tonight, thank yourself tomorrow π
One of the best things about chia pudding is that most of the work happens while you're asleep.
Prepare the chia mixture in the evening, leave it in the fridge overnight and assemble your fruit layers when you're ready to eat.
You can even assemble the whole thing ahead of time and keep it chilled for a grab-and-go breakfast or snack.
And if you're entertaining, make smaller portions in little glasses for a colourful summer dessert.
Collagen doesn't have to be boring!
Coffee and smoothies might be the classics, but unflavoured Perfect Hydrolyzed Collagen can be incorporated into all sorts of everyday recipes.
And with creamy vanilla, sweet peach and tart raspberry?
This might just be one of our prettiest ways to enjoy it yet. πβ€οΈπ
