As you may know, gelatin is a feature in this recipe, and not only does it help to make such scrummy desserts, it also has many potential health benefits (gut, hair, skin, nails and more).

Ingredients Peach Layer
- 4-8 ripe peaches*
- 1 tbsp of lemon juice
- 1 1/2 tsp of Perfect Bovine Gelatin
- 1-2 cup of peach nectar*
Ingredients Vanilla Layer
- 1 1/2 tsp of Perfect Bovine Gelatin
- 1 1/2 cup of full-cream milk**
- 1 1/2 cups of thickened cream**
- 1/3 cup of coconut sugar or 1/2 tsp of Organic Monk Fruit Sweetener
- 1 tsp of lemon zest
- Pinch of Redmond Real Salt
- 1/4 tsp of vanilla extract
- Fresh mint to serve
*If you decide to do the top layer of peach, you will need 8 peaches and you'll have to repeat the first 4 steps. Try to use organic ingredients where possible.
**If you have a dairy intolerance, you could swap out the milk for coconut milk and the cream for coconut cream.
Method
- Peel and de-seed your peaches (or use store-bought in bottle), add to blender jug and slightly process
- In a saucepan, add the peach nectar and sprinkle over the gelatin (allow to bloom for 5 minutes). Heat this mixture up and use a whisk to stir until all gelatin is completely dissolved.
- Pour this peachy gelatin mixture into your blender with the peaches and blend until well-combined
- Pour this mixture into 8 glasses, cover with cling wrap and refrigerate overnight
- In a clean saucepan, add your milk and sprinkle over the Perfect Gelatin, allow to bloom for about 5 minutes
- Heat on low-medium heat until gelatin has dissolved
- Use a hand blender to whizz smooth (or your clean blender jug again)
- Add in the cream, sugar (or monk fruit sweetener), lemon zest, a squeeze of lemon juice, salt and vanilla
- Take your set peach gelatin cups out of the fridge and pour over the cream layer
- Place back into the fridge for at least 3 hours
- Serve with another layer of peach jelly (this would involve repeating steps 1-4 again so if you can't be bothered (I feel you), or you don't have time, don't worry about it! This dessert is yummy either way!
