Who says you can only eat chocolate eggs for easter?

When donuts are so much more fun! (can we have both?) Yup!

But not just any old donut but the ultimate green donut that's covered in mouth-watering dark chocolate and sprinkle with magical green leprechaun dust!

It might sound kinda weird but you haven't tasted true heaven until you've tried one of these Matchinga Chocolate donuts, for real.

I saw the original recipe on All the Nourishing Things Instagram page which then led me to her website and I just knew that this was one recipe that I was definitely going to make so thanks for this recipe Lindsey! 😍

Just so you know, I have slightly tweaked the original recipe to give it a few extra body and brain benefits (I'm always looking at how I can get more gut-healing, skin-loving, energy-bursting and brain-boosting benefits for my tribe of health seekers).

I have never made donuts in my entire life so it was slightly daunting but to be honest it was a piece of cake (or shall I say donut?) he he.

All you need is a good donut tin (I'd recommend getting yourself a couple to save time and mucking about), a piping bag and nozzle (which you can get online here). You can also use a ziplock bag to pipe the donut mixture into the tin if you're on a tighter budget or don't have a piping bag and nozzle.

They were relatively quick and simple to make and I was actually surprised at how unbelievably delicious they were (I literally ate 5 in one sitting, oink oink!)

These donuts are actually so healthy & wholesome you could have donuts for breaky! (don't mind if I do). 🍩

The rundown on the healthy benefits of the ingredients...

Coconut Flour:

  • Coconut flour is high in essential fibre for digestion and gut health, keeping you regular (therefore great for constipation)
  • It can be helpful for maintaining healthy blood sugar levels (it's low-GI and doesn't contain much sugar)
  • Coconut flour is low-carb so it's popular amongst keto and paleo diets
  • Eating coconut flour can help to aid healthy metabolism and lower bad (LDL) cholesterol
  • Consuming coconut flour can help boost heart health
  • It is gluten-free and therefore great for coeliacs
  • It tastes amazing!

Matchinga

Matchinga is a fairly new superfood blend to hit the market in 2018 and as far as I'm aware it is the only one of it's kind..

It's a 50/50 blend of both organic Japanese matcha and organic Moringa powders that pack a nutritional punch! This is because they are both green leaves and the nutrients they contain is impressive (especially the moringa element!)

When you see how Matchinga stacks up against common day-to-day healthy foods it is nothing short of astounding! See below:

  • 9 times more calcium than milk
  • 7 times more protein than yoghurt
  • 6 times more iron than spinach
  • 48 times more Vitamin B2 than kale
  • 17 times more antioxidants than blueberries
  • 4 times more potassium than bananas
  • 2 times more Vitamin C than oranges
  • 3 times more Vitamin A than carrots
  • 10 times more nutritional potency than green tea

I am continually learning what potential benefits these two combined can have on human health and I'm continually blown away!

Organic Eggs

  • Eggs are super nutrient dense so this makes them very good for you! They contain trace amounts of calcium, zinc, vitamin D/E & K and vitamin B6

So as you can see, these donuts are pretty darn healthy and you can see how good you could feel after eating one (or if you're me, 5) ha ha 🤣

These are the donuts that work better as fuel for the day rather than as a dessert after dinner as they do contain small amount of caffeine from the matcha so morning or lunch consumption is advised.

Now to the actual recipe... 🍩

Ingredients:

Simple Keto Chocolate Glaze:
  • 1 cup of Noshu sugar-free chocolate chips
  • 1 tbsp Perfect Organic Coconut Oil

Method: 

  • Pre-heat your oven to 180c
  • In a large bowl, add the coconut flour, Matchinga powder, lakanto, baking soda, and baking powder and stir well until fully combined
  • Add the eggs and coconut oil (melted/liquid form) and mix until you have a smooth batter
  • Transfer the donut batter to a piping bag or a zip-lock bag with a 1/2" hole cut in one corner.
  • Pipe the donut batter into the wells of your donut pan, filling each well about half-full.
  • Place the donut tray into your pre-heated oven and bake for about 12 to 15 minutes. Be careful not to overcook (they should still be green, not browned).
  • Tip out onto a cooling rack and cool.
  • In a double-boiler (saucepan with 1/3 boiling water and a glass pyrex bowl on top) add in your chocolate chips and the coconut oil and whisk or stir until fully melted and smooth
  • Dip the top half of each donut into the chocolate glaze and set aside for the glaze to set (you may need to use a butter knife or some kind of utensil to help you out here as this can be messy)
  • Once the donut has set (this is the hard part because it requires patience and every cell in your body just wants to eat them NOW!) then sprinkle each donut with leprechaun dust (oh, I mean Matchinga powder) for a really cool look
  • Store in an airtight container or if you’re like me, eat half the batch :)
