How amazing is nature I mean really? It provides us with exactly what we need at the time of year we need it!

Like mushrooms...

They are in their peak in the winter months because that's when our body's need the nutrition they provide such as vitamin D, B vitamins, copper, potassium selenium and even some protein. Some mushrooms even contain iron such as shiitake and oyster.

Portobello mushrooms can provide you with 7IU/100g of vitamin D but it's important that they see the sunlight to obtain this and I think the only way to know this for sure would be to grow your own and then expose them to sunlight before eating them.

Mushroom Storage Tip

It's really best to use your mushy's while they're fresh (preferably on the day you bought them) and if storing in the fridge it's best to keep them in a brown paper bag away from any pungent foods (things with strong odours) or your shrooms will take on those smells... not what you want!

Meat Alternative

If you are looking to eat less meat or perhaps you practice 'Meatless Monday's', or maybe you're a vegan or vegetarian, you're probably well aware that mushrooms are a great meat alternative- especially Portobello mushy's! That's because they are meaty in texture and really substantial. You can even use them as a bread alternative for making burgers.

So as you can see, eating mushrooms can be a great way to improve your health and today's healing recipe is a fantastic way to get more mushrooms into your diet as this soup is based on these wonderfully delicious and nutritious portobello mushrooms!

What takes this soup form a nutritious to a healing and strengthening meal is 2 key ingredients and if you're a plant-based eater please omit these.

I am talking about hydrolyzed collagen and desiccated liver. Increasing collagen through supplementation is vital as we age as collagen production decreases and when this happens, we notice our skin starts to wrinkle, crepe and sag and lose elasticity.

By simply adding collagen powder to our foods (and beverages too) we can get the extra collagen our body needs and start to see improvements. People are having some pretty astonishing results with using Perfect Hydrolyzed Collagen, you can read them here.

Because collagen can help to repair tissues throughout the body, it can be wonderful for helping to repair the gut lining therefore an important aid in gut health!

Now onto desiccated liver and why I chose to add this to the soup recipe...

(and before you think, "eww gross" give it a chance! You can hardly taste it I promise! I was actually surprised myself, it just gives the soup a hearty flavour)

When you truly understand the facts about eating liver, you will know that it is incredibly good for you and not full of toxins like some people believe. If you have heard that liver is full of toxins please know that is misguided information. Liver stores vitamins and minerals and its main job is to filter toxins not to store toxins!

Liver can help to strengthen and heal the body and bring people out of a state of illness and into a state of wellness. This is why I added the desiccated liver powder, plus it gives it a really nice hearty flavour and it's not actually a strong liver flavour which kinda surprised me!

Without further ado, here is the recipe...

Healing & Strengthening Mushroom & Thyme Soup

Ingredients:

  • 4 litres of vegetable stock (MSG-free) or homemade broth
  • 1 kg Portobello mushrooms
  • 1 brown onion*
  • 1 heaped tsp garlic crushed/minced
  • 4 fresh thyme* sprigs or 1 tsp dried
  • 1 tsp Himalayan salt
  • Ghee*/butter*Coconut/MCT oil for frying
  • 4 scoops Perfect Hydrolyzed Collagen Powder
  • 3-4 scoops Perfect Desiccated Liver Powder
  • Organic cream/coconut cream to serve (optional)
  • Flat parsley*

*Organic and grass-fed where possible

Method:

  1. Quarter the mushrooms and also dice your onion
  2. In a large soup pot sauté the mushrooms in batches
  3. Add in the onion and gently sauté on medium continually stirring so it doesn't go brown then add in the garlic and do the same (set aside a few mushrooms to serve)
  4. Add in the veggie stock or broth, thyme and salt and let this simmer on low-medium for about 20 mins
  5. Add in the liver powder and collagen and then turn off the heat
  6. Use a stick blender (this is essential if you want to make simple, quick and nourishing soups!) to blend this until smooth but be sure to remove the thyme sprigs if you used fresh
  7. Serve in bowls with the fried mushroom slices, some fresh parsley and a dollop of organic cream (the cream is optional and please omit this if you are intolerant or dairy-free!) You could also use coconut yoghurt
