Plantiful Cereal Bowl – Gluten-free Paleo
My plantiful cereal bowl was inspired since going gluten-free and plant-based paleo (not that I’m really into labelling things but it just gets you to understand where I’m at on my food journey) I’ve had to really get creative with my food creating! Eating this way is certainly no walk in the park but it can absolutely be done and I’m going to show you that it can also be fun (and delicious too!).
Being on a journey to heal adrenal fatigue (amongst other things) I have really become very strict with what I out into my mouth because Adrenal fatigue is caused by a virus (EBV/Epstein-Barr Virus) so I am avoiding any foods or things that feed the virus. Wheat is one of them. This was what prompted me to go plant-based and after 5 weeks I am really enjoying this journey still. I don’t feel deprived and I don’t even miss eating eggs, dairy, bread or meat.
The change is starting to show in my skin and I’m eating more fruits and veggies than before and I also replaced my daily coffee with various herbal teas!
The following recipe was inspired by a beautiful young couple (Sven and Manon) at our local organic market. They have a company called ‘ActivEarth‘ and they are based here on the Gold Coast. They sell activated nuts, seeds, crackers, cereal mixes, nut butters and everything is gluten-free and paleo.
Jason (my husband) and i love going there each Sunday to get a bowl of their active cereal. It contains their own special blend of activated seeds, berries and buckwheat. Sven tops it with fresh organic fruit, their own coconut yoghurt, raw honey, fresh mint and grated ginger (oh.my.GAWD!!).
So here is my recreation of theirs. I hope I can do it justice….
Plantiful Cereal Bowl
- Paleo cereal mix (see below)
- Fresh fruit
- Fresh mint
- Raw honey
- Coconut water
- Coconut yoghurt
- Shredded coconut
- Add your cereal mix to a bowl and then top with fresh fruit
- Pour over enough coconut water so that the cereal mix is covered but not drowning
- Finish off with a scoop of coconut yoghurt, a drizzle of raw honey, some fresh, chopped mint, shredded coconut and cinnamon
Note: Honey and fruit are not the devil. there is so much misinformation out there when it comes to these natural sugars! Your body needs them, especially your brain. Your brain is mostly carbohydrate and without natural sugars it can actually shrink! Not to mention, you don’t feel great if you don’t eat fruit. Fruits are super healing and honey is too! Honey contains thousands of phytochemicals for health and wellbeing.
Ingredients for Cereal
- Raw buckwheat 1/3 cup
- Shredded coconut 1/2 cup
- Puffed buckwheat, millet or quinoa 1 cup
- Chia, sunflower, pumpkin, hemp, sesame and flax seeds 1/4 cup each
- Goji berries 1/2 cup
