Collagen Spelt Lamingtons (the journey to..)
Ok so creating these delicious iconic Australian (but with a healthy original twist) recipe was no simple baking feat!
I started out with the intention of creating a gluten-free collagen Lamington but that idea soon became my Wednesday nightmare...
Have you ever tried to bake with gluten-free flour? Well if you have you'll understand and relate to how bloody AWFUL it is for making a cake! I seriously was ready to tear my own hair out or cry or give up because the recipe wasn't cooperating!
Maybe you are someone who has had success with creating a cake using gluten-free flour and if so then I commend you, you are a super star! (and you are kind of not normal) ha but all jokes aside, I now have a new appreciation for gluten-free baking (I just won't be doing it again).
I made the first round and was dubious by the recipe I found on the internet (I won't name and shame) when it told me to beat the eggs and sugar rather than the butter and sugar (how I've always been used to doing a cake). I should have trusted my gut instinct and steered away from this recipe but I proceeded (because it was a gluten-free lamington recipe and I thought she seemed like she knew what she was doing).
So one attempt down and total flop, so I decide to give it another try but without adding additional corn flour... well that was a bloomin' waste of my valuable time! Ha ha
So now I have 2 "sponge cakes" that look more like biscotti than cake and no ingredients left to make more. I really feel like a glass of vodka or gin at this point and perhaps a cry on the couch with the fan on (because it was a freaking hot day!).
But because I'm not a quitter I persisted and decided to give it one last try but I had the sense to give up on the GF flour and opt for something more reliable - spelt flour!
The Lamington recipe I know and love beats the butter and sugar first so that's exactly what I did and I can honestly say it turned out amazing (better than I expected) and so I thought it would only be natural that I should share this recipe with you!
I really hope you enjoy this because it took me almost an entire day to get right! ha ha ;-)
Collagen Spelt Lamingtons
- 125g butter, softened
- 1 cup caster sugar
- 1/2 teaspoon vanilla extract
- 3 organic or free range eggs
- 1 3/4 cups self-raising flour, sifted
- /2 cup milk (I used an Almond/coconut blend)
- 2 cups desiccated coconut
- 3 1/2 cups icing sugar
- 1/2 cup raw cacao powder
- 1 tablespoon butter, softened
- 1/2 cup boiling water
- 2 scoops Perfect Hydrolyzed Collagen Powder
1. Pre-heat your oven to 180c and line your brownie or other small rectangular baking tin with baking paper (TIP: use some paper towel and butter to grease the tin so that the paper sticks)
2. In a bowl and using an electric beater/mixer add the butter, sugar and vanilla and beat until creamy
3. Add in an egg at a time while continually beating (may curdle but keep mixing until smooth)
4. Sift in half the spelt flour and half of the milk and fold then repeat with the remaining sifted flour and milk
5. Pour the cake mixture into your baking pan and using a spatula, smooth out until even
6. Pop into the pre-heated oven for 25 mins (I used fan-force for about 15 mins but then decided it may dry the cake out so turned fan off)
7. Tip out onto a cooling rack and allow to cool fully before dipping into the chocolate icing and coconut
8. While the cake is cooling get onto making the icing...
9. In a bowl sift in 3 1/2 cups icing sugar and 1/2 cup raw cacao (this makes it nice and chocolately!)
9. Add in the softened butter and stir well
10. Add in 2 scoops of the Perfect Hydrolyzed Collagen powder and use a whisk to whisk this well until thick and runny
11. Using a fork to help you along, pick up a sponge square and dip it into the chocolate and coat the entire square
12. Transfer over to a plate of desiccated coconut and roll into the coconut until completely covered (I used my hands here)
13. Serve on a plate or keep in a tuppawear or equivalent large container that's been lined either with paper towel or a tea towel
